About Latah Bistro
Latah Bistro features Washington inspired cuisine focusing on seasonal ingredients found right in our own backyard. Classy but casual fresh farm to table from our beautiful northwest to the pacific water, these ingredients serve as inspiration for our chefs as they create seasonal menus highlighting freshness, quality, and classic technique.
Sean Payne has been with Latah Bistro for nine fabulous years. Previously Sean was a sous chef at Italia Trattoria for two years, Luna’s sous chef for five years, Beverly’s at the Coeur d’Alene Resort for two years, and three seasons of catering for Black Rock. Sean is a graduate of the Inland Northwest Culinary Academy in Spokane. In his free time, you can find him spending time with his seven-year-old son Sawyer coaching soccer, wrestling, baseball, riding bikes, and swimming. Sean passionately enjoys hunting, fishing, golfing, camping, riding dirt bikes, furniture building, woodworking, and doing engine Restorations in his free time. Sean is the executive chef of Latah Bistro and Wine & Taps running all kitchen operations. His zest and spirit of adventure for creating new menu items are always a hit! “Quit the chit chat and get to work,” is his well-known line! This guy knows how to work hard and the finished products are mouthwatering!
