Copper River Salmon

Yes, it’s back! Copper River Salmon is fresh and back on the menu. We will be serving it as a special as long as it lasts with lemon thyme buerre blanc and cous cous. This dish pairs well with the Steele Pinot Noir.

Pots For Sale

Last week Heather and I drove to Seattle to pick up some imported pots. They are perfect for planting beautiful spring flowers, herbs or grasses. There is even a large bowl that could be used as a fountain basin. We have placed a small assortment of these at the Latah Latte drive-through for sale. If you are in the neighborhood, stop by and check ‘em out.

Spring Planting

We have been busy planting unique heirloom veggies for this season. Some of the more interesting varieties include, rainbow and purple russian tomatoes, white icicle radishes, purple carrots, tequila sunrise peppers, english cucumbers, mini eggplant, italian pole beans, and Chinese onions to name a few. Quite a bit of this gardening is in planters that surround the Bistro. Feel free to come on down and see your food before it is picked.

Wild Morel Mushrooms

It is the season for fresh Morel Mushrooms and we were recently graced by the generosity of mushroom hunters, Jeremiah Timmons and Ron Tan with a large quantity of these freshly picked morsels from the Idaho Panhandle (exact location top secret). If you have never tried this meaty, woody delicious mushroom, don’t be fooled by it’s strange appearance. It is truly one of the finest indigenous varieties of wild mushroom the Northwest has to offer. It currently sells at local gourmet markets for $48/lb. This weekend Chef Blaine presented this delicacy in a rich pasta with asparagus. Coming this Monday for our 1/2 off wine night we will top our Tenderloin with sauteed morels in foie gras butter and red wine reduction. A good wine pairing would be Robert Karl Syrah. See you Monday night. Indulge, you deserve it.

The Patio is open

Beautiful sun, romantic nights outside, cozy candles, twinkly lights, music, delicious food, martinis, wine, beer, champagne, wifi, lunch, happy hour and dinner - yep, the outdoor patio is now open. We have live music on Wednesday and Sunday nights starting in June. It is warm agian and life is good!

Duck Confit

Duck confit is high on the list of my favorite foods. It is rich, tender and decadent. Once esteemed as a preservation method, cooking and keeping duck in its rendered fat results in meltingly tender, moist, and extremely flavorful meat which can be used in a variety of simple preparations. We have used it in a variety of dishes including pizza, salad and rillett. Our latest preparation will be duck confit tacos. Enjoy!

Biz Lunch
